This is from Greece. Serves 4 - 6
500g dried navy beans
1 large sliced onion
3 carrots, thinly sliced
2 stalks blanched celery, thinly sliced.
5 beefsteak tomatoes or tinned chopped tomatoes
1 cup virgin live oil
salt and black pepper
Soak the beans the night before, in plenty of water. Next ay, drain beans put in fresh water and bring to boil repeatedly. Pour off water, drain and put in fresh water. Add other ingredients and cook for about an hour. Srinkle with parsley if wish.
