Avocado Sushi with Brown Rice



1 cup uncooked short grain brown rice
2 cups water
1 pinch sea salt
1 tablespoon brown rice vinegar
1 avocado - peeled, pitted, and thinly sliced
1/4 red bell pepper, cut into matchsticks
1/4 cup alfalfa sprouts, or to taste
4 sheets nori (dry seaweed)

1. Rinse and drain brown rice, place into a saucepan over medium heat, and pour in water. Stir in sea salt, bring to a boil, and simmer until rice has absorbed the water, about 45 minutes. Let rice cool until warm; stir in brown rice vinegar. Rice will be slightly sticky.

2. To roll the sushi, cover a bamboo sushi rolling mat with plastic wrap. Lay a sheet of nori, rough side up, on the plastic wrap. With wet fingers, firmly pat a thick, even layer of brown rice over the nori, leaving top edge about 1/2-inch deep uncovered with rice. Place 1 or 2 slices of avocado and a small amount of red bell pepper strips and alfalfa sprouts in a line along the bottom edge of the sheet.

3. Pick up the edge of the bamboo rolling sheet, fold the bottom edge of the sheet up, enclosing the vegetables, and tightly roll the sushi into a thick cylinder. Dampen the bare nori edge with a wet finger and seal the roll. Once the sushi is rolled, wrap it in the mat and gently squeeze to compact it tightly. Let rolls rest for a few minutes before cutting each roll into 6 pieces for serving.

I'm going to try this!! No fish though? Otoh, maybe I should practice first before buying sushi grade tuna...

Which reminds me... Heading over to Amazon to order a bamboo rolling mat. :)

You can add anything you want, make them different each time. Too bad we aren't closer, I have 2 mats that I've never used. I bought them years ago - it was a package deal of 2 - thinking I was going to make sushi. This recipe has me digging out the mats! I think I could do this, and wow, how I love avocado!

When I lived in Santa Barbara, I had a tree growing in the back yard. Couldn't wait for them to get ripe.

You can add anything you want, make them different each time. Too bad we aren't closer, I have 2 mats that I've never used. I bought them years ago - it was a package deal of 2 - thinking I was going to make sushi. This recipe has me digging out the mats! I think I could do this, and wow, how I love avocado!

Strips of tempeh, browned in a skillet with just a little oil, are good in sushi, too. We put matchsticks of cucumber and daikon in them, too.

They grow abundantly well in Southern Calif. so you shouldn't have a problem.

This was my first try. Shrimp, avocado, carrot, cucumber - Sort of falling apart, but they tasted really good. :)

Mark: It looks like sushi. I've seen sushi like that before.

Mark: At really, really bad sushi places...

So, he doesn't get any. :p

It's the taste that counts in the end, right? I would like to try one of them if I could. They look very tasty to me.

My first few batches didn't look this good. And I still get funky-looking rolls too often...

These look really good.

I'm going to try again next weekend, maybe with some different ingredients. It does take quite a bit of prep time, doesn't it? I was just saying I think that's another secret the Japanese have for keeping thin and fit - for every calorie you consume, you burn two, in prep and clean up!
