View Full Version : Question about sodium/salt in Miso and soy sauce

Hoping one of you knows something about this.

I'm very sensitive to salt in food: it makes me retain fluid like mad especially in my hands and feet. The only Miso soup that I've tried was an instant Kikoman packet which was way too salty for me. Is Miso that salty by nature or did I run into the typical processed/package food has too much sodium for words thing?

If Miso's so salty, how does that balance out in the diet for you/are you able to flush enough out of your system?

Any guidance would be appreciated.

I think that Dirk also drinks a lot of miso soup. I myself enjoy it and am very fond of Japanese cuisine.

I think miso is naturally kind of salty. You don't want more than a teaspoon or so of the real thing per cup of liquid, too.

But I suspect any "instant miso" - and I no longer trust Kikkoman products, BTW - will have a higher concentration of salt. After all, all the moisture has been removed and the paste powdered in order to get "instant". You can get the paste at most Asian stores, I think. Just don't get overwhelmed by the different varieties!

("Red" is a nice mild-flavored miso. It's become a favorite of ours for soups and stews. Just try to get the naturally-made product with soy, rice or barley, and sea salt - no funny long named ingredients.) ;)

We're still experimenting, finding what we like.

Stay away from the instant stuff and make your own. It's easy to make. I usually make a large pot 3 times a week and have a bowl for breakfast and with lunch and dinner. Also I beleive Tamari Sauce, which is natural Soy Sauce has less sodium. I also find that I use less Tamari as I find the taste a little stronger than Soy.

Dirk uses an instant miso when he travels but, I forgot to ask him the name anyone have any ideas? I am trying to find one that tastes good. I know it won't compare to the real thing but, every know and then. :)
